What Is D-Psicose (D-Allulose)?
D-Psicose, also widely known as D-allulose, is a rare monosaccharide belonging to the hexose and ketose categories. It is structurally a C-3 epimer of D-fructose. Naturally, it exists in extremely small quantities in certain agricultural products and fruits, such as wheat, figs, raisins, and kiwis. Due to its scarcity in nature, commercial D-Psicose is primarily produced through enzymatic isomerization, utilizing D-psicose 3-epimerase to convert D-fructose into D-psicose.
