What Is Lactase?
Lactase, also known as beta-galactosidase, is primarily sourced from microbial fermentation using fungi (such as Aspergillus oryzae), yeasts (like Kluyveromyces lactis), and bacteria. The active ingredient functions as a biological catalyst specifically designed to target lactose, the primary disaccharide sugar found in milk and dairy products.
