What Is Thaumatin?

Thaumatin is a naturally occurring sweet-tasting protein originally identified in the arils of the katemfe fruit (Thaumatococcus daniellii), a plant indigenous to the tropical rainforests of West Africa. The active components are a group of intensely sweet proteins, primarily thaumatin I and thaumatin II, which are approximately 2,000–3,000 times sweeter than sucrose on a weight basis. 

Currently, thaumatin can be obtained through main production processes:

Natural extraction:

The traditional method involves aqueous extraction from katemfe fruit arils. However, the natural thaumatin content in the fruit is extremely low , resulting in limited yield and high production costs.

Fermentation (Our Method):

The thaumatin gene is introduced into a host microorganism (such as Pichia pastoris) for liquid fermentation, followed by downstream purification and drying. This approach offers significantly higher yield, scalable and stable production, lower cost, and independence from climate-dependent agricultural supply chains.

Flavor prolongation: Extends the duration and intensity of flavors in chewing gum, confectionery, and oral care products such as toothpaste and mouthwash.

Low caloric contribution: As a protein used in trace amounts, it contributes negligible calories, making it suitable for weight-management products.

Non-cariogenic: Does not promote tooth decay, supporting its widespread use in oral hygiene and sugar-free confectionery applications.
